For the Pasta:
12 oz egg noodles (wide or medium)
Salted water, for boiling

For the Creamy Sauce:
2 tbsp unsalted butter
1 small onion, finely chopped
2 cloves garlic, minced
2 tbsp all-purpose flour
1½ cups whole milk (or half-and-half for richer sauce)
½ cup vegetable or chicken broth
¾ tsp salt
½ tsp black pepper
½ tsp onion powder
¼ tsp garlic powder
Pinch of nutmeg (optional, enhances creaminess)

For the Peas:
1½ cups frozen green peas (no need to thaw)

For Finishing:
½ cup grated Parmesan cheese
2 tbsp sour cream or cream cheese (adds tang and creaminess)
Chopped parsley or chives (optional for garnish)


Instructions

Step 1: Cook the Noodles

  1. Bring a large pot of salted water to a boil.

  2. Add egg noodles and cook according to package instructions until al dente.

  3. Drain and set aside.

Step 2: Make the Cream Sauce Base

  1. In a large skillet or saucepan, melt butter over medium heat.

  2. Add chopped onion and sauté for 2–3 minutes until softened.

  3. Stir in garlic and cook for 30 seconds until fragrant.

  4. Sprinkle flour over the onion mixture and whisk for 1 minute to form a roux.

Step 3: Add Milk and Broth

  1. Slowly whisk in the milk and broth, stirring constantly to avoid lumps.

  2. Add salt, pepper, onion powder, garlic powder, and nutmeg (if using).

  3. Bring to a gentle simmer and cook for 3–5 minutes until the sauce thickens.

Step 4: Add Peas and Cheese

  1. Stir in frozen peas and cook for another 3–4 minutes, until the peas are heated through.

  2. Reduce heat to low and add Parmesan cheese and sour cream (or cream cheese).

  3. Stir until everything is smooth, creamy, and well combined.

Step 5: Combine with Noodles

  1. Add the cooked noodles to the sauce.

  2. Toss gently to coat all the noodles evenly with the creamy sauce.

  3. Taste and adjust seasoning if needed.
