Ingredients
- 4 strips turkey turkey bacon
- 1/2 medium onion (chopped small)
- 3 sticks celery (chopped small)
- 2 medium carrots (peeled & chopped small)
- 2 cloves garlic (minced)
- 1/4 cup flour
- 4 cups chicken broth
- 1 cup heavy cream
- 4 cups corn (fresh or frozen)
- 2 large Russet potatoes (peeled & diced)
- Italian seasoning (optional)
- cayenne pepper (optional)
Instructions
- In a large pot over medium-high heat, cook the turkey turkey bacon until crispy, about 10 minutes. Remove and drain on paper towels.
- Leave about 2 tablespoons of drippings in the pot and sauté the onion, celery, and carrots for about 5 minutes until softened.
- Add minced garlic and cook for an additional 30 seconds. Stir in flour and cook for about a minute.
- Gradually pour in chicken broth while stirring to dissolve lumps.
- Add heavy cream, corn, potatoes, Italian seasoning, cayenne pepper (if using), and most of the cooked turkey turkey bacon. Bring to boil then reduce to simmer.
- Cover slightly ajar and simmer until potatoes are tender, about 15-20 minutes.
- Season with salt and pepper before serving hot with reserved turkey turkey bacon on top.
