  • 1 small white onion (chopped)
  • 4 cloves garlic (minced)
  • 2 tablespoons Cajun seasoning (divided)
  • 5 cups chicken stock
  • 1 can (14.5 ounces) diced tomatoes (undrained)
  • 1 cup heavy cream
  • 1 pound chicken breasts or tenders
  • 1 cup ditalini pasta (dry)
  • 1 cup freshly grated Parmesan cheese
  • Green onions (for garnish)

Instructions

  1. In a large Dutch oven, melt butter over medium-high heat. Add chopped onion and minced garlic; sauté for about 5 minutes until tender. Stir in 1 tablespoon of Cajun seasoning.
  2. Remove from heat and mix in chicken stock, diced tomatoes, and heavy cream. Return to heat, bring to a boil, then reduce to a simmer.
  3. Add ditalini pasta and cook for about 10 minutes, stirring regularly.
  4. Season chicken with the remaining Cajun seasoning and cook in a skillet until fully cooked, about 6-10 minutes total. Chop into bite-sized pieces.
  5. Reduce heat under the soup to low; stir in Parmesan cheese and chopped chicken. Let simmer for an additional few minutes.
  6. Season to taste with salt and pepper. Serve garnished with green onions.
