For the Skillet:

  • 1 tbsp olive oil

  • 1 lb ground beef

  • 1 small yellow onion, finely chopped

  • 3 cloves garlic, minced

  • 8 oz cremini or button mushrooms, sliced

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp dried Italian seasoning

For the Creamy Sauce:

  • 1 tbsp butter

  • 1 tbsp all-purpose flour

  • 1½ cups beef broth

  • 1 cup heavy cream (or half and half)

  • ½ cup grated Parmesan cheese

  • 1 package (20 oz) refrigerated cheese tortellini

For Garnish:

  • 2 tbsp fresh parsley, chopped

  • Extra grated Parmesan for topping


Instructions

Step 1: Cook the Beef and Vegetables

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add ground beef and cook until browned, about 5-6 minutes. Drain excess fat if needed.

  3. Stir in chopped onion and garlic, sauté for 2 minutes until softened.

  4. Add mushrooms, salt, pepper, and Italian seasoning. Cook for 4-5 minutes until mushrooms are tender and moisture is mostly evaporated.

Step 2: Make the Cream Sauce

  1. Push the beef mixture to the sides of the pan.

  2. In the center, melt the butter and sprinkle in the flour.

  3. Stir and cook for 1 minute to eliminate raw flour taste.

  4. Slowly whisk in beef broth and cream, stirring to combine everything.

  5. Bring to a gentle simmer and let the sauce thicken slightly, about 3-4 minutes.

Step 3: Add the Tortellini

  1. Add the cheese tortellini directly into the sauce.

  2. Stir to coat the pasta evenly and cover the skillet with a lid.

  3. Reduce heat to medium-low and simmer for 5-6 minutes until tortellini is tender and cooked through.

Step 4: Finish and Serve

 

  1. Stir in the Parmesan cheese until melted and sauce is creamy.

  2. Taste and adjust seasoning with more salt or pepper if needed.

  3. Garnish with chopped parsley and extra Parmesan.

  4. Serve hot straight from the skillet.

Notes

Use Fresh Tortellini – It cooks quickly and absorbs the creamy sauce beautifully.
Don’t Overcook – Tortellini can become mushy; keep an eye on them.
Mushroom Variety – Try baby bella or shiitake for a deeper flavor.
Add Greens – Toss in a handful of spinach at the end for a pop of color and nutrition.
Make It Spicy – Add red pepper flakes for a little kick.
