Ingredients
For the Skillet:
-
1 tbsp olive oil
-
1 lb ground beef
-
1 small yellow onion, finely chopped
-
3 cloves garlic, minced
-
8 oz cremini or button mushrooms, sliced
-
½ tsp salt
-
½ tsp black pepper
-
1 tsp dried Italian seasoning
For the Creamy Sauce:
-
1 tbsp butter
-
1 tbsp all-purpose flour
-
1½ cups beef broth
-
1 cup heavy cream (or half and half)
-
½ cup grated Parmesan cheese
-
1 package (20 oz) refrigerated cheese tortellini
For Garnish:
-
2 tbsp fresh parsley, chopped
-
Extra grated Parmesan for topping
Instructions
Step 1: Cook the Beef and Vegetables
-
Heat olive oil in a large skillet over medium-high heat.
-
Add ground beef and cook until browned, about 5-6 minutes. Drain excess fat if needed.
-
Stir in chopped onion and garlic, sauté for 2 minutes until softened.
-
Add mushrooms, salt, pepper, and Italian seasoning. Cook for 4-5 minutes until mushrooms are tender and moisture is mostly evaporated.
Step 2: Make the Cream Sauce
-
Push the beef mixture to the sides of the pan.
-
In the center, melt the butter and sprinkle in the flour.
-
Stir and cook for 1 minute to eliminate raw flour taste.
-
Slowly whisk in beef broth and cream, stirring to combine everything.
-
Bring to a gentle simmer and let the sauce thicken slightly, about 3-4 minutes.
Step 3: Add the Tortellini
-
Add the cheese tortellini directly into the sauce.
-
Stir to coat the pasta evenly and cover the skillet with a lid.
-
Reduce heat to medium-low and simmer for 5-6 minutes until tortellini is tender and cooked through.
Step 4: Finish and Serve
-
Stir in the Parmesan cheese until melted and sauce is creamy.
-
Taste and adjust seasoning with more salt or pepper if needed.
-
Garnish with chopped parsley and extra Parmesan.
-
Serve hot straight from the skillet.
Notes
Use Fresh Tortellini – It cooks quickly and absorbs the creamy sauce beautifully.
Don’t Overcook – Tortellini can become mushy; keep an eye on them.
Mushroom Variety – Try baby bella or shiitake for a deeper flavor.
Add Greens – Toss in a handful of spinach at the end for a pop of color and nutrition.
Make It Spicy – Add red pepper flakes for a little kick.
