  • ¼ cup plain Greek yogurt or sour cream

  • 1 packet (1 oz) ranch seasoning mix

  • ½ cup shredded cheddar cheese

  • ¼ cup cooked turkey bacon, crumbled

  • 2 tbsp chopped green onions or chives

  • Black pepper, to taste

  • Optional: 1–2 tbsp milk or broth for creamier texture

For Topping:

  • Extra cheddar cheese

  • Additional bacon crumbles

  • Sliced green onions

  • Optional: hot sauce or ranch drizzle


Instructions

Step 1: Bake the Potatoes

  1. Preheat oven to 400°F (200°C).

  2. Scrub potatoes clean, prick with a fork several times, and rub with olive oil and a little salt.

  3. Place directly on the oven rack or a baking sheet and bake for 45–60 minutes until tender.

  4. Alternatively, microwave potatoes for 8–10 minutes, flipping halfway through.

Step 2: Prepare the Crack Chicken Filling

  1. In a mixing bowl, combine cream cheese, Greek yogurt, and ranch seasoning until smooth.

  2. Stir in shredded chicken, crumbled turkey bacon, cheddar cheese, and green onions.

  3. Add a splash of milk or broth if needed to reach a creamy consistency.

  4. Taste and adjust seasoning with pepper.

Step 3: Stuff the Potatoes

  1. When potatoes are done, let cool slightly, then slice each one open lengthwise.

  2. Fluff the inside gently with a fork to create space for the filling.

  3. Spoon the crack chicken mixture generously into each potato.
