Instructions
Step 1: Cook the Chicken
Heat olive oil in a large soup pot over medium heat.
Add chicken breasts and sear for 2-3 minutes per side until lightly golden.
Pour in the chicken broth and bring to a simmer.
Cover and cook for 15-18 minutes, or until the chicken is fully cooked.
Remove the chicken, shred it with two forks, and set aside.
Step 2: Sauté the Vegetables

Step 3: Add Seasonings and Broth
