Ingredients
- 2 lb chicken tenderloins
- 1/2 cup flour
- 1 tbsp all-purpose seasoning
- 1 tsp salt
- 1/2 tsp freshly cracked pepper
- 2 eggs
- 1/4 cup milk
- 3 cups cornflakes (crushed)
- 1 stick melted butter
- 4 cloves garlic, minced
- zest and juice of 1/2 lemon
- 1 tbsp dijon mustard
- 1 tsp paprika
- 1/2 tsp cayenne or red pepper flakes
- 1/2 tsp dried thyme
- 1 tsp red pepper flakes
- 1 tbsp chives or green onions, sliced
- 2 tbsp fresh parsley minced
- kosher salt and pepper to taste
Instructions
- Crush cornflakes in a ziplock bag using a rolling pin until coarse.
- Set up three shallow dishes: one with flour and seasoning mix, another with whisked eggs and milk, and the last with crushed cornflakes.
- Coat each chicken tender in flour, dip in egg wash, then press into cornflake crumbs.
- Air fry at 400°F for 10 minutes total, flipping halfway through.
