  • 2 lb chicken tenderloins
  • 1/2 cup flour
  • 1 tbsp all-purpose seasoning
  • 1 tsp salt
  • 1/2 tsp freshly cracked pepper
  • 2 eggs
  • 1/4 cup milk
  • 3 cups cornflakes (crushed)
  • 1 stick melted butter
  • 4 cloves garlic, minced
  • zest and juice of 1/2 lemon
  • 1 tbsp dijon mustard
  • 1 tsp paprika
  • 1/2 tsp cayenne or red pepper flakes
  • 1/2 tsp dried thyme
  • 1 tsp red pepper flakes
  • 1 tbsp chives or green onions, sliced
  • 2 tbsp fresh parsley minced
  • kosher salt and pepper to taste

Instructions

  1. Crush cornflakes in a ziplock bag using a rolling pin until coarse.
  2. Set up three shallow dishes: one with flour and seasoning mix, another with whisked eggs and milk, and the last with crushed cornflakes.
  3. Coat each chicken tender in flour, dip in egg wash, then press into cornflake crumbs.
  4. Air fry at 400°F for 10 minutes total, flipping halfway through.
  5. Mix sauce ingredients in a bowl; toss cooked tenders in the sauce before serving.
