½ tsp salt
1 cup cottage cheese (small curd works best)
2 large eggs
½ cup milk (whole or 2%)
¼ cup unsalted butter, melted
2 tbsp honey or sugar (optional, for a touch of sweetness)
Optional Add-Ins:
½ cup shredded cheddar cheese
1 small jalapeño, finely diced (for a spicy kick)
2 tbsp chopped chives or green onions
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Grease an 8×8-inch baking pan or line with parchment paper for easy removal.
Step 2: Mix Dry Ingredients
In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, and salt.
Set aside.
Step 3: Mix Wet Ingredients
In another bowl, beat the eggs lightly.
Add the cottage cheese, milk, melted butter, and honey (if using).
Stir until everything is well combined.
Step 4: Combine Wet and Dry Ingredients
Pour the wet mixture into the dry ingredients.
