Ingredients

1 cup cottage cheese (full-fat or low-fat)

¼ cup warm water (about 110°F)

1 packet (2¼ tsp) active dry yeast

2 tbsp honey or maple syrup

2 eggs, room temperature

2 tbsp olive oil or melted butter

1½ tsp salt

3 to 3½ cups all-purpose or bread flour (plus extra for kneading)

Optional: 2 tbsp ground flaxseed or whole oats for added texture
Instructions
Step 1: Activate the Yeast

In a small bowl, combine warm water, honey, and yeast.

Let sit for 5–10 minutes, until foamy and bubbly.
Step 2: Mix Wet Ingredients
3. In a large mixing bowl, whisk together cottage cheese, eggs, olive oil, and salt until well combined.
4. Stir in the activated yeast mixture.
Step 3: Add Flour & Knead
5. Gradually add flour 1 cup at a time, stirring or mixing on low speed.
6. Once the dough comes together, knead for 6–8 minutes by hand or in a stand mixer, adding more flour as needed until smooth and slightly tacky.
Step 4: First Rise
7. Place dough in a lightly greased bowl, cover with a towel or plastic wrap, and let rise in a warm place for 1 to 1½ hours, or until doubled in size.
Step 5: Shape the Loaf
8. Punch down the dough and turn it out onto a floured surface.
9. Shape into a loaf and place into a greased 9×5-inch pan.
10. Cover and let rise for another 30–45 minutes, or until puffy and slightly above the rim of the pan.
Step 6: Bake the Bread
11. Preheat oven to 375°F (190°C).
12. Bake for 30–35 minutes, or until the top is golden and the loaf sounds hollow when tapped.
13. Optional: Use a thermometer—bread is done at 190°F internal temperature.
Step 7: Cool & Slice
14. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
