  • 1 lb x-large shrimp cleaned
  • 1 cup unsweetened coconut flakes
  • 1/2 cup panko
  • 1 egg
  • 1/2 cup beef broth
  • 3 tbsp cornstarch
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/8 tsp garlic powder
  • 1 cup vegetable oil
  • sweet chili sauce for dipping

Instructions

  1. Heat vegetable oil in a large skillet over medium heat until hot.
  2. In one bowl, mix coconut flakes and panko crumbs together.
  3. In another bowl, combine cornstarch; in a third bowl, whisk together flour, baking powder, garlic powder, egg, and beef broth until smooth.
  4. Coat each shrimp lightly in cornstarch, dip into the batter, then roll in the coconut mixture.
  5. Carefully place shrimp in the hot skillet; cook for about 3 minutes on each side until golden brown.
  6. Remove from skillet and drain excess oil on paper towels.
  7. Serve hot with sweet chili sauce for dipping.
