Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream together softened butter and sugar using an electric mixer until light and fluffy.
- Add eggs one at a time, followed by cream of coconut, buttermilk, and coconut extract; mix until well combined.
- Gradually add dry ingredients to the wet mixture until just combined.
- Divide the batter evenly between prepared pans and bake for about 25-30 minutes or until a toothpick comes out clean.
- Allow cakes to cool for about 10 minutes before transferring them to a cooling rack.
