Instructions

Step 1: Prepare the Cobbler Batter

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the flour, baking powder, and salt.
  • Add in the melted butter, milk, sugar, vanilla extract, and egg, stirring until the batter is smooth and well combined.

Step 2: Make the Snickerdoodle Topping

  • In a small bowl, mix together the melted butter, sugar, and cinnamon.
  • Set this cinnamon-sugar mixture aside to use for the topping.

Step 3: Assemble the Cobbler

  • Pour the batter into a greased 9-inch baking dish, spreading it evenly across the bottom.
  • Pour the cinnamon-sugar mixture over the top of the batter. Don’t stir it in; just let it sit on top.

Step 4: Make the Sauce

  • In a small saucepan, combine the apple cider (or water), sugar, and vanilla extract.
  • Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is simmering.
  • Pour the hot sauce over the cobbler batter. It will look like a lot of liquid, but that’s okay—it will create a delicious, gooey base as it bakes.

Step 5: Bake the Cobbler
