  • 1/4 cup brown sugar
  • 1/2 cup pure canned pumpkin
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • Cinnamon Sugar (2–3 tablespoons)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease mini loaf pans and line with parchment paper.
  2. In a bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, oil, and vanilla until smooth.
  3. Sift in the flour, baking powder, baking soda, pumpkin pie spice, and salt. Mix until just combined.
  4. Pour batter into pans and sprinkle with cinnamon sugar. Swirl gently with a toothpick.
  5. Bake for 28–30 minutes for mini loaves or about 20–23 minutes for muffin pans. Check doneness with a toothpick.
  6. Cool in the pan for about 10–15 minutes before transferring to a wire rack to cool completely.
