For the Cinnamon Swirl:

  • 1/4 cup brown sugar, packed – Adds sweetness to the swirl.
  • 1 tablespoon ground cinnamon – For the perfect cinnamon swirl.
  • 2 tablespoons unsalted butter, melted – To combine the swirl ingredients.

For the Glaze:

  • 1 cup powdered sugar – For a sweet, creamy glaze.
  • 1 tablespoon milk – To thin out the glaze.
  • 1/2 teaspoon vanilla extract – For added flavor.

Instructions

Step 1: Preheat the Oven
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cookie removal.

Step 2: Prepare the Dough
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy (about 3-4 minutes). Add the egg and vanilla extract, and beat until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

Step 3: Make the Cinnamon Swirl
In a small bowl, mix together the brown sugar, cinnamon, and melted butter until well combined.

Step 4: Assemble the Cookies
Scoop out about 1-2 tablespoons of dough and roll it into a ball. Use your finger or the back of a spoon to create a small indentation in the center of each dough ball. Spoon about 1/2 teaspoon of the cinnamon swirl mixture into the indentation, then carefully fold the edges of the dough over the swirl to cover it, sealing the dough ball.

Place the cookies on the prepared baking sheet, leaving about 2 inches between each one.

Step 5: Bake the Cookies
Bake the cookies in the preheated oven for 10-12 minutes, or until they are lightly golden around the edges. Let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 6: Make the Glaze
While the cookies are cooling, make the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth and pourable.

Step 7: Drizzle the Glaze
Once the cookies are completely cool, drizzle the glaze over the tops of the cookies in a swirl pattern, just like a cinnamon roll!

Notes

  • Chill the dough: If you find the dough is too soft to work with, chill it in the fridge for 30 minutes before rolling.
  • Add extra cinnamon: If you love cinnamon, you can increase the cinnamon in both the cookie dough and the swirl for a more intense flavor.
