Ingredients

• 2½ lbs sweet potatoes, peeled and cut into 1-inch cubes
• 2 tbsp pure maple syrup
• 2 tbsp olive oil
• 1 tsp ground cinnamon
• ½ tsp salt
• ¼ tsp black pepper
• Optional: ¼ tsp nutmeg or smoked paprika for a flavor twist
• Optional garnish: chopped pecans, fresh thyme, or a drizzle of extra maple syrup


Instructions

Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C).
Line a large baking sheet with parchment paper or lightly grease it.

Step 2: Prep the Sweet Potatoes
In a large bowl, combine sweet potato cubes, maple syrup, olive oil, cinnamon, salt, and pepper.
Toss well to coat evenly. Add optional nutmeg or paprika for extra warmth or depth if desired.

Step 3: Arrange on Baking Sheet
Spread the sweet potatoes in a single layer on the prepared baking sheet.
Make sure they’re not overcrowded—use two pans if needed for maximum crispiness.
