Ingredients

Scale

1 cup (2 sticks) unsalted butter, softened
¾ cup brown sugar, packed
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
2¼ cups all-purpose flour
1 tsp baking soda
½ tsp salt
2 cups semi-sweet chocolate chips

For the Cheesecake Filling:
16 oz cream cheese, softened
½ cup granulated sugar
1 large egg
1 tsp vanilla extract

Optional Toppings:
Extra chocolate chips for the top
A light dusting of powdered sugar
Drizzle of melted chocolate or caramel


Instructions

Step 1: Preheat and Prep
Preheat oven to 350°F (175°C).
Line a 9×13-inch pan with parchment paper or lightly grease with non-stick spray.

Step 2: Make the Cookie Dough
In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
Add eggs one at a time, beating well after each. Stir in vanilla extract.
In a separate bowl, whisk together flour, baking soda, and salt.
Gradually mix dry ingredients into the butter mixture until just combined.
Fold in the chocolate chips.

Step 3: Prepare the Cheesecake Filling
In a medium bowl, beat cream cheese until smooth.
Add sugar, egg, and vanilla, mixing until creamy and well combined.

Step 4: Layer and Assemble
Press about two-thirds of the cookie dough into the bottom of the prepared pan to form an even crust.
Spread the cheesecake filling evenly over the cookie base.
Drop spoonfuls of the remaining cookie dough over the cheesecake layer. Gently spread and pat down.
Sprinkle extra chocolate chips on top if desired.

Step 5: Bake
Bake for 35–40 minutes, or until the top is golden brown and the center is set.
Let cool completely in the pan, then refrigerate for at least 2 hours before slicing.

 

Step 6: Slice and Serve
Lift the bars out using parchment paper (if used) and cut into squares.
Serve chilled or at room temperature with a light dusting of powdered sugar or a drizzle of chocolate.

Notes

Room Temperature Cream Cheese – Prevents lumps in the filling.
Don’t Overbake – The center should still have a slight jiggle when removed.
Chill Before Cutting – For clean, neat slices.
