Ingredients
- 2 ripe bananas – The riper, the sweeter!
- 1 ½ cups rolled oats – Provides texture and a chewy bite.
- ½ cup all-purpose flour – Gives structure to the cookies.
- ½ teaspoon baking soda – Helps the cookies rise and become soft.
- ½ teaspoon cinnamon – Adds warmth and flavor.
- 1/4 teaspoon salt – Enhances the sweetness of the bananas.
- ½ cup chocolate chips – For that gooey, chocolatey goodness.
- 1 teaspoon vanilla extract – Adds a touch of sweetness and depth.
- ¼ cup coconut oil or butter (melted) – For richness and texture.
- 2 tablespoons maple syrup or honey (optional) – If you want extra sweetness.
Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: Mash the Bananas
In a large bowl, mash the ripe bananas with a fork until smooth, leaving a few small chunks for added texture. The more ripe your bananas, the sweeter the cookies will be!
Step 3: Mix the Ingredients
Add the rolled oats, all-purpose flour, baking soda, cinnamon, and salt to the mashed bananas. Stir to combine.
Add the melted coconut oil (or butter), vanilla extract, and maple syrup (if using). Mix until everything is well incorporated. Fold in the chocolate chips.
Step 4: Form the Cookies
Using a spoon or cookie scoop, drop rounded tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart. The dough will be a bit sticky, so dampen your hands with a little water if needed to shape the dough.
Step 5: Bake the Cookies
Bake in the preheated oven for 10-12 minutes or until the edges are golden and the center is set. The cookies will firm up as they cool.
Step 6: Cool and Enjoy
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Enjoy these soft, chewy cookies with a glass of milk or a cup of tea!
