Ingredients

For the Chicken Marinade:
1 lb boneless, skinless chicken breasts or thighs
2 tbsp olive oil
1 tbsp lime juice
1 tsp chipotle chili powder
1 tsp paprika
½ tsp cumin
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp black pepper

For the Chipotle Ranch Sauce:
½ cup mayonnaise
¼ cup sour cream
1 tbsp lime juice
1–2 tsp adobo sauce (from canned chipotle peppers)
1 tsp dried dill
½ tsp onion powder
½ tsp garlic powder
Salt and pepper to taste

For the Burrito Fillings:
4 large flour tortillas (burrito size)
1 cup cooked white or brown rice
1 cup black beans, rinsed and drained
1 cup shredded cheddar or Mexican blend cheese
½ cup diced tomatoes or pico de gallo
½ cup shredded lettuce
¼ cup chopped cilantro (optional)

Optional Add-Ins:
Sliced avocado or guacamole
Corn kernels
Jalapeños
Sautéed onions and peppers
Squeeze of fresh lime juice


Instructions

Step 1: Marinate the Chicken
In a bowl or zip-top bag, combine olive oil, lime juice, and all spices.
Add chicken and coat well. Let marinate for at least 30 minutes or up to 4 hours in the fridge.

Step 2: Make the Chipotle Ranch
In a bowl, whisk together mayonnaise, sour cream, lime juice, adobo sauce, dill, garlic powder, and onion powder.
Season with salt and pepper. Chill until ready to use.

Step 3: Grill the Chicken
Preheat a grill or grill pan over medium heat.
Cook chicken for 5–6 minutes per side, or until fully cooked (internal temp 165°F).
Let rest for 5 minutes, then slice into strips.

Step 4: Assemble the Burritos
Warm tortillas on a dry skillet or in the microwave for a few seconds.
Layer rice, beans, grilled chicken, cheese, tomatoes, lettuce, and cilantro.
Drizzle generously with chipotle ranch sauce.

 

Step 5: Roll and Grill (Optional)
Fold in the sides and roll up tightly.
For extra texture, grill the burrito seam-side down in a skillet until golden and crispy.
