Ingredients
For the Chicken & Marinade:
1 lb boneless chicken thighs or breasts, thinly sliced
1 tbsp cornstarch
½ tsp salt
½ tsp black pepper
1 tbsp vegetable oil
For the Teriyaki Sauce:
⅓ cup low-sodium soy sauce
2 tbsp honey
2 tbsp brown sugar
2 tbsp rice vinegar
1 tbsp sesame oil
2 cloves garlic, minced
1 tsp fresh ginger, grated
2 tsp cornstarch + 2 tbsp water (slurry)
For the Noodles & Veggies:
8 oz noodles (lo mein, spaghetti, or rice noodles)
1 red bell pepper, thinly sliced
1 cup shredded carrots
1 cup broccoli florets
2 green onions, sliced
1 tbsp sesame seeds (optional garnish)
Instructions
Step 1: Cook the Noodles
Cook noodles according to package instructions until al dente. Drain and set aside.
Step 2: Prepare the Teriyaki Sauce
In a bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, and ginger. Set aside.
In a small bowl, mix cornstarch and water to make a slurry.
Step 3: Cook the Chicken
Toss sliced chicken with cornstarch, salt, and pepper.
Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook for 5–7 minutes, or until browned and cooked through. Remove from skillet and set aside.
Step 4: Sauté the Vegetables
In the same skillet, add bell pepper, shredded carrots, and broccoli. Stir-fry for 3–4 minutes until just tender.
Step 5: Combine Everything
Return the cooked chicken to the skillet.
Pour in the teriyaki sauce and bring to a simmer.
Add the cornstarch slurry and stir until the sauce thickens, about 1–2 minutes.
Add the cooked noodles and toss everything together until well coated.
Step 6: Serve
Garnish with green onions and sesame seeds. Serve hot and enjoy.
