- 1 lb boneless, skinless chicken breast (cut into 1-inch cubes)
- 2 cups broccoli florets
- 1/2 yellow bell pepper (cut into 1-inch pieces)
- 1/2 red bell pepper (cut into 1-inch pieces)
- 1/2 cup baby carrots (sliced)
- 1/4 cup low sodium soy sauce
- 1/4 cup honey
- 2 tbsp olive oil
- 2 tsp minced ginger
- 2 garlic cloves (minced)
- 1 tbsp corn starch
- 2 tbsp cold water
- 1/4 cup low sodium chicken broth
- 1/2 tsp crushed red pepper flakes
Instructions
- Season chicken cubes with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add chicken and cook for about 5-6 minutes until browned.
- Remove chicken from the pan and set aside. In the same pan, add another tablespoon of olive oil. Stir-fry broccoli, yellow bell pepper, red bell pepper, and baby carrots for about 3-4 minutes until tender yet crisp.
- In a small bowl, mix corn starch with cold water until smooth. Add low sodium chicken broth, soy sauce, honey, minced ginger, minced garlic, and crushed red pepper flakes to this mixture.
- Return cooked chicken to the vegetable mix in the pan and pour the sauce over everything. Stir well to combine and cook for an additional 2-3 minutes until heated through and sauce thickens slightly.
- Serve hot over steamed rice or noodles.
