  • ¾ cup chopped red bell pepper
  • ¾ cup chopped red onion
  • ½ cup frozen corn
  • 1 cup shredded cooked chicken
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon fine sea salt or kosher salt
  • 4 8-inch flour tortillas (white or whole wheat)
  • ¾ cup shredded sharp cheddar cheese
  • ¾ cup shredded Monterey jack or pepper jack cheese

Instructions

  1. Heat olive oil in a skillet over medium heat. Add bell pepper, onion, and corn; sauté for 6–8 minutes until softened.
  2. In a bowl, combine shredded chicken with chili powder, cumin, garlic powder, oregano, and salt. Mix well and stir in the sautéed vegetables.
  3. Spread half of each tortilla with the chicken mixture and top with cheese. Fold over.
  4. Cook on a grill pan over medium heat for 2–4 minutes per side until golden brown and cheese melts.
