  • 16 leaves butter lettuce (or iceberg or romaine)
  • 2 medium carrots (finely chopped)
  • 1 red bell pepper (finely chopped)
  • 3 green onions (white and light green parts only, thinly sliced)
  • ½ cup cashews (or peanuts)
  • 6 tablespoons low sodium soy sauce
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons water
  • 1 tablespoon finely chopped fresh ginger
  • 3 cloves garlic (minced)
  • zest of 1 orange
  • 2 teaspoons cornstarch
  • pinch red pepper flakes
  • 1 tablespoon olive oil

Instructions

  1. In a small bowl, whisk together low sodium soy sauce, honey, rice vinegar, water, ginger, garlic, orange zest, cornstarch, and red pepper flakes until smooth. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add ground chicken and cook until browned.
  3. Stir in chopped carrots and red bell pepper; cook until tender.
  4. Pour the sauce into the skillet and cook for an additional 1-2 minutes until thickened. Mix in sliced green onions and cashews.
  5. Serve the chicken mixture in butter lettuce leaves for wrapping.
