  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 cup all-purpose flour (for dredging)

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter

  • 8 oz fresh mushrooms, sliced

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup sour cream

  • ½ cup chicken broth

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp paprika

  • Salt and pepper to taste

  • 1½ cups shredded mozzarella cheese

  • 2 tbsp chopped fresh parsley (optional, for garnish)


Instructions

Step 1: Prep the Chicken

  1. Preheat your oven to 350°F (175°C).

  2. Lightly season the chicken breasts with salt, pepper, and paprika.

  3. Dredge each piece in flour, shaking off any excess.

Step 2: Brown the Chicken

  1. In a large skillet, heat olive oil and butter over medium heat.

  2. Brown the chicken for 2-3 minutes per side until golden (it will finish cooking in the oven).

  3. Transfer the browned chicken to a greased 9×13 inch baking dish.

Step 3: Sauté the Mushrooms

  1. In the same skillet, add the sliced mushrooms and cook for 3-4 minutes until softened and lightly browned.

  2. Spoon the cooked mushrooms evenly over the chicken.

Step 4: Make the Sauce

  1. In a mixing bowl, combine the cream of mushroom soup, sour cream, chicken broth, garlic powder, and onion powder.

  2. Stir until smooth and creamy.

Step 5: Assemble and Bake

  1. Pour the sauce evenly over the chicken and mushrooms.

  2. Sprinkle the shredded mozzarella cheese over the top.

  3. Bake uncovered for 30-35 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.

Step 6: Garnish and Serve

  1. Remove from oven and let rest for 5 minutes.

  2. Garnish with fresh chopped parsley before serving.
