-
4 boneless, skinless chicken breasts (or thighs)
-
1 cup all-purpose flour (for dredging)
-
2 tbsp olive oil
-
2 tbsp unsalted butter
-
8 oz fresh mushrooms, sliced
-
1 can (10.5 oz) cream of mushroom soup
-
½ cup sour cream
-
½ cup chicken broth
-
1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp paprika
-
Salt and pepper to taste
-
1½ cups shredded mozzarella cheese
-
2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
Step 1: Prep the Chicken
-
Preheat your oven to 350°F (175°C).
-
Lightly season the chicken breasts with salt, pepper, and paprika.
-
Dredge each piece in flour, shaking off any excess.
Step 2: Brown the Chicken
-
In a large skillet, heat olive oil and butter over medium heat.
-
Brown the chicken for 2-3 minutes per side until golden (it will finish cooking in the oven).
-
Transfer the browned chicken to a greased 9×13 inch baking dish.
Step 3: Sauté the Mushrooms
-
In the same skillet, add the sliced mushrooms and cook for 3-4 minutes until softened and lightly browned.
-
Spoon the cooked mushrooms evenly over the chicken.
Step 4: Make the Sauce
-
In a mixing bowl, combine the cream of mushroom soup, sour cream, chicken broth, garlic powder, and onion powder.
-
Stir until smooth and creamy.
Step 5: Assemble and Bake
-
Pour the sauce evenly over the chicken and mushrooms.
-
Sprinkle the shredded mozzarella cheese over the top.
-
Bake uncovered for 30-35 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
Step 6: Garnish and Serve
-
Remove from oven and let rest for 5 minutes.
-
Garnish with fresh chopped parsley before serving.
Notes
Dredge Lightly – A thin flour coating gives a nice crust without being heavy.
Use Fresh Mushrooms – Baby bella or cremini mushrooms add extra flavor.
Don’t Overcook – Chicken is done when it reaches an internal temperature of 165°F.
Let It Rest – Resting helps the sauce thicken slightly and flavors meld together.
Double the Sauce – If you love extra creamy casseroles, make 1½ times the sauce!
