  • 1 Pound Boneless Skinless Chicken Breast (Cut into Strips)
  • 2 Peppers (Cut into Strips)
  • 1 Small Onion (Sliced into Strips)
  • 1 Packet of Fajita Seasoning (1.12 ounces)
  • ¼ Cup of Water
  • 8.5 Ounce Package of Prepared Rice (Cilantro and Lime Flavor)
  • ⅓ Cup Sour Cream
  • 1 ½ Cups Monterey Jack Cheese (Shredded)
  • 78 Large Tortillas (Burrito Size)

Instructions

  1. Heat oil in a skillet over medium-high heat and add chicken strips. Cook for about 3 minutes until no longer pink.
  2. Add sliced peppers and onions; stir frequently for another 3 to 5 minutes.
  3. Pour in water and sprinkle fajita seasoning over the mixture, stirring until coated and cooked through.
  4. Cover the skillet to keep the mixture warm.
  5. Cook rice according to package instructions, then combine with sour cream in a bowl.
  6. On each tortilla, place ¼ cup of the rice mixture, followed by ½ cup of the chicken mixture and ¼ cup of cheese.
  7. Roll up burrito-style by tucking in the sides first, then rolling from the bottom up.
