Ingredients

For the Chicken & Marinade:

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • ½ teaspoon sesame oil

For the Chow Mein Sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sugar
  • ½ teaspoon sesame oil
  • ¼ teaspoon black pepper
  • ¼ cup chicken broth or water

For the Stir-Fry:

 

  • 8 oz chow mein noodles (or substitute with thin egg noodles or spaghetti)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 cup cabbage, shredded
  • ½ cup carrots, julienned
  • ½ cup bell pepper, thinly sliced
  • ½ cup bean sprouts (optional)
  • 3 green onions, sliced
  • 1 teaspoon sesame seeds (optional, for garnish)

Instructions

Step 1: Cook the Noodles
Cook the chow mein noodles according to the package instructions. Drain, rinse with cold water, and toss with 1 teaspoon of oil to prevent them from sticking together.

Step 2: Marinate the Chicken
In a small bowl, combine the sliced chicken with soy sauce, cornstarch, and sesame oil. Let it marinate for about 10-15 minutes while you prepare the rest of the ingredients.

Step 3: Make the Sauce
In a separate small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sugar, sesame oil, black pepper, and chicken broth. Set aside.

Step 4: Stir-Fry the Chicken
Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry for 4-5 minutes until it’s fully cooked. Remove the chicken from the pan and set aside.

Step 5: Stir-Fry the Vegetables
In the same pan, add the remaining tablespoon of oil. Add garlic and ginger, and sauté for 30 seconds until fragrant. Then, add cabbage, carrots, bell pepper, and bean sprouts. Stir-fry for 2-3 minutes until the veggies are slightly tender but still crisp.

Step 6: Combine Everything
Return the cooked chicken to the pan. Add the cooked noodles and pour the prepared sauce over the top. Toss everything together to coat the noodles and chicken in the sauce. Stir-fry for another 2-3 minutes, making sure everything is heated through.

Step 7: Serve & Enjoy!
Stir in the sliced green onions and remove the pan from heat. Garnish with sesame seeds (if using) and serve hot.

Notes

  • Use Fresh Noodles: If you can find fresh chow mein noodles, they make a big difference in texture. Otherwise, thin egg noodles or even spaghetti can work as a substitute.
  • Customize the Veggies: Feel free to add or swap veggies like mushrooms, snow peas, or baby corn to suit your taste.
  • High Heat for Stir-Frying: Make sure to stir-fry on high heat for that signature wok flavor.
