  • 6 oz Chow Mein Noodles
  • 2 boneless skinless chicken breasts, sliced
  • 2 tablespoons vegetable oil
  • 2 celery stalks, sliced
  • 2 cups thinly sliced green cabbage
  • ½ cup matchstick carrots
  • 3 green onions, chopped
  • 2 teaspoons minced ginger
  • 3 teaspoons minced garlic
  • ¼ cup low sodium soy sauce
  • 1½ tablespoons oyster sauce
  • ½ tablespoon granulated sugar
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Season chicken strips with salt and pepper. Heat 1 tablespoon of vegetable oil in a large frying pan over medium heat. Cook the chicken until browned, then transfer to a paper towel-lined plate.
  2. Cook chow mein noodles according to package instructions, then drain and set aside.
  3. In the same pan, add remaining vegetable oil and sauté celery and carrots for 2–3 minutes. Add green cabbage and half of the chopped green onions; stir-fry until vegetables are tender yet crunchy (about 3–4 minutes).
  4. In a bowl, mix minced ginger, garlic, soy sauce, oyster sauce, sugar, and sesame oil to create the sauce.
  5. Return cooked chicken and noodles to the pan. Pour sauce over everything and toss gently until evenly coated and heated through.
  6. Garnish with remaining green onions before serving hot.
