- 6 oz Chow Mein Noodles
- 2 boneless skinless chicken breasts, sliced
- 2 tablespoons vegetable oil
- 2 celery stalks, sliced
- 2 cups thinly sliced green cabbage
- ½ cup matchstick carrots
- 3 green onions, chopped
- 2 teaspoons minced ginger
- 3 teaspoons minced garlic
- ¼ cup low sodium soy sauce
- 1½ tablespoons oyster sauce
- ½ tablespoon granulated sugar
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Season chicken strips with salt and pepper. Heat 1 tablespoon of vegetable oil in a large frying pan over medium heat. Cook the chicken until browned, then transfer to a paper towel-lined plate.
- Cook chow mein noodles according to package instructions, then drain and set aside.
- In the same pan, add remaining vegetable oil and sauté celery and carrots for 2–3 minutes. Add green cabbage and half of the chopped green onions; stir-fry until vegetables are tender yet crunchy (about 3–4 minutes).
- In a bowl, mix minced ginger, garlic, soy sauce, oyster sauce, sugar, and sesame oil to create the sauce.
- Return cooked chicken and noodles to the pan. Pour sauce over everything and toss gently until evenly coated and heated through.
