Ingredients
For the Casserole:
1 lb boneless, skinless chicken breast or thighs, cut into chunks
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp Italian seasoning
1 bunch asparagus, trimmed and cut into 2-inch pieces
½ cup chicken broth
¾ cup heavy cream or half-and-half
1 tsp Dijon mustard
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
Optional Add-Ins:
1 small onion, finely diced
1 cup mushrooms, sliced
1 cup baby spinach
¼ tsp crushed red pepper flakes (for heat)
Instructions
Step 1: Preheat & Prep
Preheat oven to 375°F (190°C).
Grease a 9×13 inch casserole dish with a little olive oil or butter.
Step 2: Cook the Chicken
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Add chicken, season with salt, pepper, garlic powder, and Italian seasoning.
Cook for 5–6 minutes until lightly browned (it doesn’t have to be fully cooked through).
Remove from heat and set aside.
Step 3: Prepare the Creamy Sauce
In a mixing bowl, whisk together chicken broth, heavy cream, and Dijon mustard.
Stir in half of the Parmesan cheese for extra depth.
Step 4: Assemble the Casserole
Layer the browned chicken and asparagus in the prepared dish.
Pour the creamy sauce evenly over the top.
Sprinkle mozzarella cheese evenly across the dish.
Top with the remaining Parmesan cheese and a sprinkle of herbs if desired.
Step 5: Bake
Bake uncovered for 25–30 minutes, or until the cheese is melted and bubbly and the chicken is fully cooked.
Optional: Broil for 2–3 minutes at the end for a golden cheese crust.
Step 6: Rest & Serve
Let the casserole sit for 5 minutes before serving.
Garnish with fresh parsley or basil for a pop of color.
