Ingredients
For the Chicken:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
½ tsp black pepper
For the Sweet Potatoes:
2 medium sweet potatoes, peeled and diced
1 tbsp olive oil
½ tsp paprika
½ tsp salt
¼ tsp black pepper
For the Rice:
1½ cups cooked white or brown rice
(about ¾ cup uncooked)
For the Bowl Assembly:
1 avocado, sliced
½ cup corn kernels (fresh, canned, or frozen)
¼ cup crumbled feta cheese
2 tbsp chopped fresh cilantro
Lime wedges for serving

Step-by-Step Instructions
Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper or lightly grease it.
Step 2: Roast the Sweet Potatoes
In a mixing bowl, toss the diced sweet potatoes with olive oil, paprika, salt, and black pepper.
Spread them out evenly on one side of the prepared baking sheet.
Roast for 10 minutes while you prepare the chicken.
Step 3: Season and Add the Chicken
In another bowl, toss the chicken pieces with olive oil, paprika, garlic powder, onion powder, salt, and pepper.
After the sweet potatoes have roasted for 10 minutes, remove the pan from the oven and add the seasoned chicken to the other side of the sheet.
Return to the oven and roast for another 15–18 minutes, stirring halfway through, until the chicken is cooked through and the sweet potatoes are tender and caramelized.
Step 4: Cook the Rice
While the chicken and sweet potatoes are roasting, cook the rice according to package directions.
Fluff with a fork and set aside.
Step 5: Assemble the Bowls
Spoon a layer of rice into each bowl.
Top with roasted chicken and sweet potatoes.
Add avocado slices, corn, and crumbled feta cheese.
Sprinkle with chopped cilantro and serve with lime wedges and your choice of sauce.
