  • 3 cups cooked chicken, shredded or chopped

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 3 cups fresh spinach, chopped

  • 8 oz cream cheese, softened

  • ½ cup sour cream

  • ½ cup chicken broth

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 ½ cups shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • Optional toppings: chopped parsley, red pepper flakes, extra cheese


Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 375°F (190°C).

  2. Lightly grease a 9×13-inch casserole dish and set aside.

Step 2: Sauté the Spinach

  1. Heat olive oil in a skillet over medium heat.

  2. Add minced garlic and sauté for 30 seconds until fragrant.

  3. Add spinach and cook for 2–3 minutes until wilted.

  4. Remove from heat and set aside.

Step 3: Make the Cream Cheese Sauce

  1. In a large bowl, beat cream cheese until smooth.

  2. Mix in sour cream, chicken broth, garlic powder, onion powder, salt, and pepper.

  3. Stir until creamy and well blended.

Step 4: Assemble the Casserole

  1. Add cooked chicken, sautéed spinach, 1 cup of mozzarella, and Parmesan to the sauce mixture.

  2. Stir until everything is evenly coated.

  3. Transfer to the prepared baking dish and spread evenly.

  4. Sprinkle the remaining ½ cup of mozzarella over the top.

Step 5: Bake the Casserole

  1. Bake uncovered for 25–30 minutes, or until hot and bubbly and cheese is melted.

  2. Optional: broil for 2–3 minutes for a golden cheesy top.

Step 6: Garnish and Serve

  1. Let rest for 5 minutes.

  2. Garnish with parsley or red pepper flakes.

  3. Serve hot with a side salad, garlic bread, or roasted veggies.
