- 1 Tbsp olive oil
- Kosher salt & black pepper
- 3 Tbsp butter
- 1 Tbsp chicken base
- 4 Tbsp all-purpose flour
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 2 cups chicken stock
- 1/2 cup water
- Optional: 1/4 cup heavy cream

Instructions
- Season chicken breasts with kosher salt and pepper.
- In a skillet over medium heat, add olive oil and cook the chicken for about 5 minutes per side until reaching an internal temperature of 165°F. Remove and set aside.
- Lower heat to medium-low; add butter and chicken base to skillet until melted.
- In a bowl, mix flour, onion powder, garlic powder, salt, and pepper. Gradually add this mixture to the skillet while stirring continuously for about 30 seconds to form a roux.
- Slowly pour in chicken stock while scraping up bits from the pan. Add water, whisking until smooth. Let simmer until thickened.
- If desired, stir in heavy cream.
- Shred the cooked chicken if preferred and return it to the gravy; let it simmer for a few more minutes.
- Taste and adjust seasoning as needed before serving over mashed potatoes.
