  • 1 Tbsp olive oil
  • Kosher salt & black pepper
  • 3 Tbsp butter
  • 1 Tbsp chicken base
  • 4 Tbsp all-purpose flour
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 cups chicken stock
  • 1/2 cup water
  • Optional: 1/4 cup heavy cream
  • Instant Pot Mashed Potatoes

Instructions

  1. Season chicken breasts with kosher salt and pepper.
  2. In a skillet over medium heat, add olive oil and cook the chicken for about 5 minutes per side until reaching an internal temperature of 165°F. Remove and set aside.
  3. Lower heat to medium-low; add butter and chicken base to skillet until melted.
  4. In a bowl, mix flour, onion powder, garlic powder, salt, and pepper. Gradually add this mixture to the skillet while stirring continuously for about 30 seconds to form a roux.
  5. Slowly pour in chicken stock while scraping up bits from the pan. Add water, whisking until smooth. Let simmer until thickened.
  6. If desired, stir in heavy cream.
  7. Shred the cooked chicken if preferred and return it to the gravy; let it simmer for a few more minutes.
  8. Taste and adjust seasoning as needed before serving over mashed potatoes.
