  • 1 large head cauliflower, cut into florets

  • 2 tbsp olive oil

  • 3 tbsp unsalted butter, melted

  • 3 cloves garlic, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp Italian seasoning

  • ½ cup grated parmesan cheese

  • ½ cup shredded mozzarella cheese

  • 2 tbsp chopped parsley (for garnish)

Optional Add-ins:

  • Lemon zest for brightness

Instructions

Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper or foil for easy cleanup.

Step 2: Prep the Cauliflower
Wash and cut the cauliflower into bite-sized florets.
In a large bowl, toss the cauliflower with olive oil, melted butter, garlic, salt, pepper, and Italian seasoning until evenly coated.

Step 3: Roast the Cauliflower
Spread the cauliflower in a single layer on the baking sheet.
Roast for 20 minutes, flipping halfway through, until lightly golden and fork-tender.

Step 4: Add the Cheese
Remove the pan from the oven and sprinkle the roasted cauliflower with parmesan and mozzarella.
Return to the oven and bake for another 5–7 minutes, or until the cheese is melted and bubbly with golden spots.

 

Step 5: Garnish & Serve
Sprinkle with chopped fresh parsley and serve hot.
