Ingredients

Scale

For the Rollups:

  • 4 large flour tortillas or soft flatbreads

  • 1 ½ cups shredded mozzarella cheese (or cheese blend)

  • ¼ cup grated parmesan cheese (optional, for added richness)

For the Garlic Butter:

  • 3 tbsp unsalted butter, melted

  • 2 cloves garlic, minced or grated

  • 1 tbsp chopped fresh parsley (or 1 tsp dried parsley)

  • ¼ tsp salt

  • Optional: pinch of chili flakes for a little heat

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 375°F (190°C).

  2. Line a baking sheet with parchment paper or a silicone mat.

Step 2: Make the Garlic Butter

  1. Melt butter in a small bowl (microwave or stovetop).

  2. Stir in minced garlic, parsley, salt, and chili flakes if using.

  3. Let sit for a few minutes to infuse the flavors.

Step 3: Assemble the Rollups

  1. Lay a tortilla flat on a clean surface.

  2. Sprinkle ⅓ cup mozzarella cheese evenly over the tortilla.

  3. Add a bit of parmesan if using.

  4. Roll the tortilla tightly from one end to the other.

  5. Repeat with the remaining tortillas.

Step 4: Slice & Arrange

  1. Slice each roll into 4–5 pieces using a sharp knife.

  2. Place rollups cut-side down on the prepared baking sheet.

  3. Brush generously with garlic butter on all exposed surfaces.

Step 5: Bake to Golden Perfection

  1. Bake for 10–12 minutes, or until cheese is melted and edges are lightly golden.

  2. Optional: Broil for 1–2 minutes for extra crispy tops—watch closely.

Step 6: Serve & Enjoy

  1. Let cool slightly and serve warm.

  2. Garnish with extra parsley or a sprinkle of parmesan if desired.

  3. Pair with marinara, ranch, or garlic sauce for dipping.

Notes

Use Fresh Garlic – It adds rich, bold flavor.
Shred Cheese Yourself – Melts smoother than pre-shredded.
Don’t Overfill – Too much cheese will leak while baking.
Tuck Ends When Rolling – Prevents cheese from spilling out.
Serve Warm – Best enjoyed fresh and gooey.
