Ingredients
- 1 pound ground beef
- ¾ cup chopped onion
- ¾ cup shredded carrots
- ¾ cup diced celery
- 3 cups chicken broth
- 4 cups diced potatoes (about 1¾ pounds)
- 12 ounces pepper jack cheese (Velveeta), cut into cubes
- 1½ cups milk
Instructions
- In a large saucepan, brown the ground beef over medium-high heat. Drain excess fat and set aside.
- In the same saucepan, add 1 tablespoon of butter. Sauté onion, carrots, celery, basil, and parsley until tender (about 10 minutes). Add garlic and cook until fragrant.
- Pour in chicken broth and diced potatoes; add cooked beef. Bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes until potatoes are tender.
- In a small skillet, melt remaining butter over medium heat. Whisk in flour to create a roux; cook until bubbly (3-5 minutes). Stir this into the soup and bring back to a boil for 2 minutes while stirring.
- Lower heat; add cheese cubes, milk, salt, and black pepper. Stir continuously until cheese melts into a creamy consistency. Remove from heat and blend in sour cream.
