Ingredients

- 3 red bell peppers (chopped)
- 1 sweet onion (chopped)
- 2 poblano peppers (chopped and deseeded)
- Avocado oil
- Salt and pepper
- Favorite beef rub
- 10 ounces heavy cream
- 8 ounces white queso
- 1 can of Rotel (8 ounces)
- American cheese slices
- Slider buns
- Garlic aioli
Instructions
- Form the ground beef into large patties slightly larger than slider rolls; season with beef rub and refrigerate for 30 minutes.
- Sauté chopped bell peppers and onions in avocado oil until softened.
- In a saucepan, heat heavy cream, whisk in queso until melted; stir in Rotel.
- Cook patties on medium-high heat for about 4-5 minutes per side; top with sautéed vegetables and cheese to melt.
- Toast slider buns on the griddle; spread garlic aioli on each bottom bun.
