Ingredients

For the Butterscotch Sauce:
• 1½ cups brown sugar (light or dark)
• 2 cups boiling water
• 4 tbsp unsalted butter
• 1 tsp vanilla extract
• Pinch of salt

For the Cobbler Topping:
• 1 cup all-purpose flour
• ¾ cup granulated sugar
• 2 tsp baking powder
• ½ tsp salt
• ½ cup milk
• 2 tbsp melted butter
• 1 tsp vanilla extract

Optional Garnishes:
• Vanilla ice cream or whipped cream
• Chopped toasted pecans
• A light dusting of cinnamon


Instructions

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease a square 8×8 or 9×9-inch baking dish with butter or non-stick spray.

Step 2: Make the Butterscotch Sauce
In a bowl, combine the brown sugar, boiling water, butter, vanilla extract, and a pinch of salt.
Stir until the sugar is mostly dissolved and butter is melted. Set aside.

Step 3: Mix the Cobbler Batter
In another bowl, whisk together the flour, granulated sugar, baking powder, and salt.
Add in the milk, melted butter, and vanilla extract.
Stir just until combined—the batter will be thick and smooth.

Step 4: Assemble the Cobbler
Pour the cobbler batter into the greased baking dish and spread it evenly.
Slowly pour the butterscotch sauce over the top of the batter—do not stir.
The sauce will sink to the bottom during baking, creating a rich butterscotch layer.

Step 5: Bake Until Golden
Carefully transfer the dish to the preheated oven.
Bake for 40–45 minutes, or until the top is golden brown and set.
You may see bubbling sauce around the edges—this is perfect!

Step 6: Cool Slightly & Serve
Let the cobbler cool for at least 10–15 minutes before serving to allow the sauce to thicken slightly.
Spoon into bowls and serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
