Instructions

Step 1: Toast the Bread

  • Toast the slices of sourdough bread in a toaster or on a grill until golden brown and crispy.

Step 2: Cook the Bacon

  • In a skillet, cook the bacon over medium heat until crispy, about 3-4 minutes per side. Remove from the pan and drain on paper towels. Set aside.

Step 3: Fry the Eggs

  • In the same skillet, add 1 tablespoon of olive oil and heat over medium-high heat.
  • Crack the eggs into the skillet and fry them to your desired doneness. For a sunny-side-up egg, cook for about 2-3 minutes, until the whites are set but the yolk is still runny. For a more well-done egg, flip and cook for another minute.
  • Season with salt and pepper to taste.

  • While the eggs are cooking, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash the avocado with a fork until smooth but still slightly chunky. Season with a pinch of salt and pepper.
