Ingredients

For the Chili:
1 tbsp olive oil
1 lb chicken breasts or thighs, diced or shredded
1 small onion, diced
1 green bell pepper, chopped
1 jalapeño, seeded and minced (optional)
2 cloves garlic, minced
2 tsp Cajun seasoning
½ tsp smoked paprika
½ tsp ground cumin
¼ tsp dried oregano
Salt and pepper to taste
2 cans (15 oz each) white beans (cannellini or Great Northern), drained and rinsed
1 cup frozen corn
2½ cups low-sodium chicken broth
½ cup sour cream or Greek yogurt
½ cup heavy cream or coconut milk

For Garnish:
Chopped green onions
Fresh cilantro or parsley
Shredded cheese (optional)
Sliced jalapeños or crushed red pepper (for extra heat)
Tortilla chips or cornbread on the side


Instructions

Step 1: Sauté Aromatics and Chicken

  1. Heat olive oil in a large pot over medium heat.

  2. Add diced onion and bell pepper. Cook for 3–4 minutes until softened.

  3. Stir in jalapeño (if using) and garlic, and cook for 1 more minute.

  4. Add chicken, Cajun seasoning, paprika, cumin, oregano, salt, and pepper.

  5. Cook until chicken is browned and cooked through, about 6–8 minutes.

Step 2: Build the Chili Base
6. Stir in drained white beans, corn, and chicken broth.
7. Bring to a simmer and cook uncovered for 15–20 minutes to meld flavors.

Step 3: Add Creaminess
8. Reduce heat to low and stir in sour cream and heavy cream.
9. Simmer gently for another 5 minutes. Do not boil after adding dairy.
10. Taste and adjust seasoning—add more Cajun spice for heat or salt to balance.

 

Step 4: Garnish & Serve
11. Ladle into bowls and top with green onions, herbs, cheese, or sliced jalapeños.
12. Serve with tortilla chips, warm bread, or cornbread for dipping.

Notes

Use Rotisserie Chicken – Great time-saver and adds extra flavor.
Blend Some Beans – For a thicker chili, mash or blend ½ cup of the beans before adding.
