1 lb chicken breasts or thighs, diced or shredded
1 small onion, diced
1 green bell pepper, chopped
1 jalapeño, seeded and minced (optional)
2 cloves garlic, minced
2 tsp Cajun seasoning
½ tsp smoked paprika
½ tsp ground cumin
¼ tsp dried oregano
Salt and pepper to taste
2 cans (15 oz each) white beans (cannellini or Great Northern), drained and rinsed
1 cup frozen corn
2½ cups low-sodium chicken broth
½ cup sour cream or Greek yogurt
½ cup heavy cream or coconut milk
For Garnish:
Chopped green onions
Fresh cilantro or parsley
Shredded cheese (optional)
Sliced jalapeños or crushed red pepper (for extra heat)
Tortilla chips or cornbread on the side
Instructions
Step 1: Sauté Aromatics and Chicken

Step 2: Build the Chili Base
