Ingredients
- 3 cups elbow macaroni
- 2 lbs cooked crab legs or 2 1/2 cups diced imitation crab meat
- 2 lbs shrimp, peeled and deveined
- 1 cup whole milk
- 2 – 2 2/3 cups evaporated milk
- 4 cups sharp cheddar cheese, grated
- 2 cups mild cheddar cheese, grated
- 2 cups colby & Monterey jack cheese, grated
- 1/2 cup parmesan cheese, grated
- Cajun seasoning
Instructions
- In a large skillet over medium heat, toss shrimp with olive oil and Cajun seasoning; cook until pink (about 4-6 minutes), then set aside.
- Preheat oven to 350°F (177°C) and lightly butter a baking dish.
- Boil water in a large pot; cook elbow macaroni until al dente, drain, and combine with shrimp and crab in a bowl.
- In another bowl, whisk together whole milk, evaporated milk, spices, and beaten eggs.
- Stir in most of the cheese mixture into the pasta until well combined.
- Pour into the baking dish; top with reserved cheeses and additional seasoning.
- Bake for about 45-55 minutes until golden brown. Let sit for 25-30 minutes before serving.
