  • 3 cups elbow macaroni
  • 2 lbs cooked crab legs or 2 1/2 cups diced imitation crab meat
  • 2 lbs shrimp, peeled and deveined
  • 1 cup whole milk
  • 22 2/3 cups evaporated milk
  • 4 cups sharp cheddar cheese, grated
  • 2 cups mild cheddar cheese, grated
  • 2 cups colby & Monterey jack cheese, grated
  • 1/2 cup parmesan cheese, grated
  • Cajun seasoning

Instructions

  1. In a large skillet over medium heat, toss shrimp with olive oil and Cajun seasoning; cook until pink (about 4-6 minutes), then set aside.
  2. Preheat oven to 350°F (177°C) and lightly butter a baking dish.
  3. Boil water in a large pot; cook elbow macaroni until al dente, drain, and combine with shrimp and crab in a bowl.
  4. In another bowl, whisk together whole milk, evaporated milk, spices, and beaten eggs.
  5. Stir in most of the cheese mixture into the pasta until well combined.
  6. Pour into the baking dish; top with reserved cheeses and additional seasoning.
  7. Bake for about 45-55 minutes until golden brown. Let sit for 25-30 minutes before serving.
