Ingredients
- 4 salmon fillets (4 ounces each)
- 1 pound raw jumbo shrimp, peeled and deveined
- 5 tablespoons unsalted butter
- 1 tablespoon all-purpose flour
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tablespoons Cajun seasoning (divided)
- 2 cups fresh baby spinach
- 1 cup shredded Monterey Jack cheese
Instructions
- Rinse the salmon and shrimp under cold water, then pat dry.
- Season salmon with 1 tablespoon Cajun seasoning and shrimp with the remaining tablespoon.
- In a skillet over medium-high heat, melt 2 tablespoons butter with vegetable oil. Cook salmon for about 4 minutes per side until golden brown; remove from skillet.
- In the same skillet, add shrimp and cook for about 2–3 minutes until pink.
- Lower heat; add remaining butter and whisk in flour until smooth. Gradually pour in chicken broth while whisking, then stir in cream, paprika, and remaining Cajun seasoning; simmer until thickened.
- Add spinach to sauce until wilted, then mix in cheese until melted. Return salmon and shrimp to skillet; coat well before serving.
