Ingredients
For the Banana Bread:
• 1 ½ cups mashed ripe bananas (about 3 medium bananas)
• 2 large eggs
• ½ cup brown sugar
• ¼ cup granulated sugar
• ⅓ cup vegetable oil or melted butter
• 1 tsp vanilla extract
• 1 ¾ cups all-purpose flour
• 1 tsp baking soda
• ½ tsp baking powder
• ½ tsp salt
• ½ tsp ground cinnamon (optional)
• ¾ cup butterscotch chips
Optional Toppings:
• Extra butterscotch chips
• Chopped nuts (walnuts or pecans)
• Sprinkle of coarse sugar
Instructions
Step 1: Preheat Oven & Prepare Pan

Preheat oven to 350°F (175°C).

Grease a 9×5-inch loaf pan or line with parchment paper.
Step 2: Mix the Wet Ingredients

In a large bowl, mash the bananas until smooth.

Add eggs, brown sugar, granulated sugar, oil, and vanilla.

Whisk until well combined and smooth.
Step 3: Add the Dry Ingredients

Stir in flour, baking soda, baking powder, salt, and cinnamon (if using).

Mix gently until just combined—don’t overmix.

Fold in the butterscotch chips.
Step 4: Pour & Top

Pour the batter into the prepared loaf pan and smooth the top.

Step 5: Bake the Bread

Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
