  • 1.5 cups fresh chopped tomatoes

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta

Instructions

  2. Spread frozen butternut squash, chopped tomatoes, and sliced onion on the baking sheet.
  3. Drizzle olive oil over the vegetables, then season with salt, black pepper, and dried thyme. Mix well.

  6. Reserve about 1/3 cup of starchy pasta water before draining.
  7. Combine the roasted vegetables and reserved pasta water in a blender; blend until smooth.
