Ingredients

  • 2 tbsp Olive Oil
  • 1 medium Sweet Onion (finely diced)
  • 1/4 tsp Red Pepper Flakes
  • 5 cloves Garlic (roughly chopped)
  • 6 cups Butternut Squash (about 2lbs)
  • 2 tsp Italian Seasoning
  • 2 quarts Vegetable Broth
  • 1 chunk Parmesan Rind
  • 1/2 lb Mafalda Pasta (or dried lasagna noodles) (broken up)
  • 2 cups Fresh Kale
  • 1/2 cup Heavy Cream
  • 1/4 cup Brown Sugar
  • 1 cups Low Moisture Mozzarella (I recommend Lake o'Lakes Mozzarella shreds)

Instructions

  1. Heat olive oil in a large soup pot over medium heat. Add diced onion and sauté with salt and red pepper flakes for 3 minutes until softened. Stir in chopped garlic and cook for another 3 minutes.
  2. Add butternut squash, Italian seasoning, and salt; sauté for 5 minutes until caramelized.
  3. Pour in vegetable broth and add parmesan rind. Bring to boil, then simmer for 10 minutes. Remove rind and puree half the soup using an immersion blender.
  4. Return parmesan rind to the pot, stir in broken pasta, and simmer until cooked, about 10 minutes.
  5. Turn off heat; mix in fresh kale, heavy cream, and brown sugar. Adjust seasoning as needed.
  6. Serve hot topped with shredded mozzarella.
