Ingredients

Scale

For the Dough:

  • 4 cups all-purpose flour (plus more for dusting)

  • 2¼ tsp active dry yeast (1 packet)

  • 1¼ cups buttermilk, warmed to about 110°F

  • ¼ cup unsalted butter, melted

  • 2 tbsp sugar

  • 1½ tsp salt

  • 1 egg, room temperature

For Brushing:

  • 2 tbsp melted butter (for after baking)


Instructions

Step 1: Activate the Yeast

  1. In a small bowl, combine warm buttermilk and sugar. Stir in yeast and let sit for 5–10 minutes until foamy.

Step 2: Make the Dough
2. In a large mixing bowl, whisk together flour and salt.
3. Add yeast mixture, egg, and melted butter to the flour.
4. Mix until a soft dough forms, then knead by hand for 8–10 minutes or in a stand mixer for 5–6 minutes until dough is smooth and elastic.

Step 3: First Rise
5. Place the dough in a lightly oiled bowl, cover with a towel or plastic wrap, and let rise in a warm place for about 1 to 1½ hours, or until doubled in size.

Step 4: Shape the Rolls
6. Punch down the dough and divide into 12 equal pieces.
7. Shape each piece into a smooth ball and arrange in a greased 9×13 baking dish or on a baking sheet with space between each roll.

Step 5: Second Rise
8. Cover the shaped rolls with a towel and let rise again for 30–45 minutes until puffy.

Step 6: Bake
9. Preheat oven to 375°F (190°C).
10. Bake rolls for 18–22 minutes, or until golden brown and cooked through.

 

Step 7: Brush with Butter and Serve
11. Remove from oven and brush tops with melted butter.
12. Let cool slightly and serve warm.

Notes

Check Buttermilk Temp – It should be warm, not hot, to activate the yeast properly.
Use Fresh Yeast – Make sure your yeast is within its expiration date for best rise.
Don’t Skip the Second Rise – This gives rolls their fluffiness.
Use a Kitchen Scale – For evenly sized rolls and even baking.
Customize – Add herbs, garlic, or cheese to the dough for extra flavor.
