  • 2 medium-sized carrots, diced
  • 2 medium-sized celery ribs, diced
  • 2 cans butter beans (14oz each), drained
  • 1 cup water
  • 2 cups low sodium vegetable broth
  • 1 bay leaf
  • Salt and black pepper to taste

Instructions

  1. In a large heavy-based pot over medium heat, add olive oil and sauté the diced onion until soft and translucent (3–5 minutes). Stir in minced garlic and spices; cook until fragrant (about 30 seconds).
  2. Add diced carrots and celery; toss to combine.
  3. Blend 1½ cans of butter beans with water until smooth. Return the puree to the pot along with remaining whole beans.
  4. Pour in vegetable broth, add bay leaf, salt, and pepper. Bring to a simmer; maintain a gentle simmer for about 25 minutes.
  5. Taste and adjust seasoning before serving in bowls drizzled with olive oil.
