For the Brownie Crust:

  • 1/2 cup unsalted butter

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/3 cup unsweetened cocoa powder

  • 1/2 cup all-purpose flour

  • 1/4 tsp salt

  • 1/4 tsp baking powder

For the Cream Cheese Topping:

  • 8 oz cream cheese, softened

  • 1/4 cup unsalted butter, softened

  • 1 cup powdered sugar

  • 1 tsp vanilla extract

For the Fruit Topping (suggestions):

  • 1/2 cup sliced strawberries

  • 1/2 cup blueberries

  • 1/2 cup kiwi, peeled and sliced

  • 1/2 cup mandarin oranges (drained if canned)

  • 1/4 cup raspberries

  • 1 tbsp honey or apricot jam (optional, for glaze)


Instructions

Step 1: Make the Brownie Base

  1. Preheat oven to 350°F (175°C).

  2. Grease a 12-inch pizza pan or line with parchment paper.

  3. In a saucepan over low heat, melt butter. Remove from heat.

  4. Stir in sugar, eggs, and vanilla until smooth.

  5. Add cocoa powder, flour, salt, and baking powder. Mix until well combined.

  6. Spread the batter evenly into the prepared pan.

  7. Bake for 15-18 minutes or until the center is set.

  8. Let cool completely in the pan on a cooling rack.

Step 2: Prepare the Cream Cheese Frosting

  1. In a mixing bowl, beat softened cream cheese and butter until creamy.

  2. Gradually add powdered sugar and vanilla, beating until fluffy.

  3. Chill frosting for 10 minutes to firm it up slightly.

Step 3: Assemble the Pizza

  1. Once the brownie base is fully cooled, spread the cream cheese frosting evenly over the top.

  2. Arrange sliced fruit in a circular pattern or get creative with your own design.

  3. For extra shine, brush fruit lightly with warmed honey or apricot jam.

Step 4: Chill and Serve

 

  1. Refrigerate the assembled pizza for 30 minutes to help set.

  2. Slice like a traditional pizza and serve chilled or at room temperature.

Cool the Base – Make sure the brownie layer is completely cool before frosting.
