• 6 large eggs
• ¼ cup milk (dairy or plant-based)
• 1 tbsp butter or oil (for cooking eggs)
• 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
• 1 avocado, sliced or mashed
• ½ cup salsa or pico de gallo
• 2 green onions, sliced
• ¼ cup chopped fresh cilantro
• ½ tsp salt
• ¼ tsp black pepper

Instructions
Step 1: Prep the Tostadas
If using store-bought tostadas, set aside.
To make your own, lightly brush corn tortillas with oil and bake at 400°F (200°C) for 8–10 minutes, flipping halfway until golden and crisp.
Step 2: Heat the Beans
