  • ½ cup chopped red onion
  • ½ cup chopped bell pepper
  • 4 large eggs
  • Salt (to taste)
  • 1 tablespoon butter
  • 4 whole wheat English muffins
  • 4 slices sharp cheddar cheese
  • 4 slices cooked turkey turkey bacon
  • ¾ cup guacamole

Instructions

  1. Heat olive oil in a nonstick skillet over medium heat. Sauté chopped onion and bell pepper until softened (about 3 minutes). Transfer to a bowl.
  2. In a mixing bowl, whisk the eggs with salt. Melt butter in the skillet over medium-low heat, then pour in the eggs, adding the sautéed veggies on top.
  3. Cook until edges set, gently lifting them to allow uncooked egg to flow underneath until mostly set. Transfer to a plate, fold into thirds, and cut into four pieces.
