- 4 whole wheat English muffins
- 4 slices sharp cheddar cheese
- 4 slices cooked turkey turkey bacon
- ¾ cup guacamole
Instructions
- Heat olive oil in a nonstick skillet over medium heat. Sauté chopped onion and bell pepper until softened (about 3 minutes). Transfer to a bowl.
- In a mixing bowl, whisk the eggs with salt. Melt butter in the skillet over medium-low heat, then pour in the eggs, adding the sautéed veggies on top.
