Ingredients
• 1 cup strawberries, hulled and halved
• 1 cup blueberries
• 1 cup green or red grapes, halved
• 1 cup pineapple chunks (fresh or canned in juice)
• 1 cup kiwi, peeled and sliced
• 1 orange, peeled and segmented
• 1 banana, sliced
• 1 tbsp honey or maple syrup (optional)
• 1 tbsp fresh lime or orange juice
• ½ tsp lime or orange zest
• Optional: 1 tbsp chopped fresh mint
Instructions
Step 1: Prep the Fruit
Wash and dry all fresh fruit.
Hull and halve the strawberries, halve the grapes, peel and slice the kiwi and banana, and cut the pineapple into bite-sized chunks.
Peel and segment the orange.
Step 2: Make the Citrus Glaze
In a small bowl, whisk together honey (or maple syrup), citrus juice, and zest until well combined.
This adds just a hint of sweetness and brightness without overpowering the natural flavor of the fruit.
Step 3: Combine the Fruit
Place all the prepared fruit in a large mixing bowl.
Drizzle the citrus glaze over the fruit.
Gently toss to coat evenly.
Step 4: Add Optional Garnish
Sprinkle chopped fresh mint over the salad if using.
It adds a fresh, herbal touch that enhances the overall flavor.
Step 5: Chill or Serve Immediately
Serve right away for the best texture and color.
If you prefer it chilled, cover and refrigerate for up to 30 minutes before serving.
Notes
Use Ripe, In-Season Fruit – The better the fruit, the better the salad.
Add Banana Last – To keep slices fresh and prevent browning.
Mix Gently – Use a soft spatula to avoid bruising delicate berries.
Zest Before Juicing – It’s easier to zest citrus when whole.
Add Texture – A sprinkle of chopped nuts or granola gives crunch.
