Ingredients

For the Breakfast Bake:
1 cup old-fashioned rolled oats
½ tsp baking powder
½ tsp cinnamon
⅛ tsp salt
¾ cup cottage cheese (small curd)
2 large eggs
⅓ cup maple syrup or honey
1 tsp vanilla extract
½ cup milk (dairy or non-dairy)
1 cup fresh or frozen blueberries

Optional Toppings:
¼ cup sliced almonds or chopped walnuts
1 tbsp turbinado or brown sugar (for a sweet top)
Extra blueberries or a drizzle of nut butter


Instructions

Step 1: Preheat the Oven

  1. Preheat oven to 350°F (175°C).

  2. Lightly grease an 8×8-inch baking dish or line with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a mixing bowl, stir together oats, baking powder, cinnamon, and salt.

Step 3: Combine the Wet Ingredients

  1. In another bowl, whisk together cottage cheese, eggs, maple syrup (or honey), vanilla, and milk until well combined.

  2. Stir the wet mixture into the dry oat mixture.

Step 4: Fold in the Blueberries

  1. Gently fold in the blueberries, being careful not to crush them.

  2. Pour the batter into the prepared baking dish and spread evenly.

Step 5: Add Toppings & Bake

  1. Sprinkle with sliced almonds or nuts and turbinado sugar if desired.

  2. Bake for 35–40 minutes, or until the center is set and the top is golden brown.

  3. Let cool for 5–10 minutes before slicing.

Step 6: Serve & Enjoy

  1. Serve warm or at room temperature.

  2. Top with extra fruit, yogurt, or a drizzle of maple syrup if you like.

Notes

Use Small Curd Cottage Cheese – It blends more easily into the batter.
Don’t Overmix – Gently fold in the blueberries to keep them whole.
Make It Vegan – Use flax eggs, plant-based milk, and dairy-free yogurt instead of cottage cheese.
Use Frozen Blueberries – No need to thaw, but add 5 extra minutes to bake time.
