For the Banana Bread:

  • 2 ripe bananas, mashed

  • 2 large eggs

  • ½ cup vegetable oil or melted butter

  • ½ cup granulated sugar

  • ¼ cup brown sugar

  • ¼ cup plain yogurt or sour cream

  • 1 tsp vanilla extract

  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • 1 cup fresh or frozen blueberries (if using frozen, do not thaw)

For the Cinnamon Swirl:

  • 2 tbsp granulated sugar

  • 1 tbsp brown sugar

  • 1 tsp cinnamon


Instructions

Step 1: Prepare the Oven and Pan
Preheat oven to 350°F (175°C).
Grease a 9×5-inch loaf pan or line with parchment paper for easy removal.

Step 2: Make the Batter
In a large mixing bowl, whisk together mashed bananas, eggs, oil (or melted butter), granulated sugar, brown sugar, yogurt, and vanilla extract until smooth.
In another bowl, combine flour, baking soda, salt, and cinnamon.
Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
Fold in blueberries carefully to avoid breaking them up.

Step 3: Prepare the Cinnamon Swirl
In a small bowl, mix granulated sugar, brown sugar, and cinnamon.
Set aside for layering.

Step 4: Assemble the Bread
Pour half of the banana bread batter into the prepared loaf pan.
Sprinkle half of the cinnamon swirl mixture evenly over the batter.
Add the remaining batter and top with the rest of the cinnamon mixture.
Use a knife or skewer to gently swirl the cinnamon into the batter for a marbled effect.

Step 5: Bake the Banana Bread
Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
Check around 45 minutes and tent with foil if the top is browning too quickly.
Let the bread cool in the pan for 10–15 minutes, then transfer to a cooling rack.

 

Step 6: Slice and Enjoy
Slice when fully cooled for clean cuts.
Serve plain or with a smear of butter or cream cheese.

Notes

Use Overripe Bananas – More sweetness and flavor come from speckled, ripe bananas.
Don’t Overmix – Gentle folding ensures a light, tender crumb.
Fresh or Frozen Blueberries – Both work well; just coat with a bit of flour if using fresh to prevent sinking.
Swirl Lightly – A few figure-eights with a knife create a beautiful pattern without overmixing.
Let It Cool – The flavors deepen and set as it rests.
